This Chicken Tostadas recipe has an authentic Mexican flavor to it. Tostadas are made with corn tortillas which are much healthier than flour tortillas. It’s simple, healthy yet delicious & flavorful.
1-1/2 pounds skinless, boneless chicken breast halves, cooked and cubed
6 (6 inch) corn tortillas
6 cups salsa
3 cups shredded romaine lettuce
1/2 cup chopped green bell pepper
1/2 cup chopped tomatoes
6 tbsp fat free sour cream
6 tbsp shredded Cheddar cheese
How to make Low Fat Chicken Tostadas:
To Make Tostadas:
Place chicken, lettuce, green bell pepper, tomatoes and onions in a large bowl.
Mix well and keep aside.
Heat tortillas on a hot griddle over medium heat.
Turning once until puffy and golden.
To Assemble Tostadas:
Place chicken mixture evenly on tortillas.
Top with salsa and sour cream.
Sprinkle cheese over the tortillas.
