Sweet mung beans or kidney beans*
Shredded Young Coconut* (macapuno)
Sweet Purple Yam* (ube)
Coconut gel* (nata de coco)
Leche Flan, premade or bought
Pounded dried rice* (pinipig) or crisped rice
*indicates ingredients most likely found at your local filipino or asian grocery
Prepare ice by crushing or shaving it in a blender or with ice shaver. The ice should be soft and easy to melt--not chunky.
In an individual serving size bowl or parfait glass, layer the first 5 ingredients with the shaved ice.
Add 2-3 tablespoons of evaporated milk to the layers. The milk should make the mixture moist not completely wet.
Place cubes of leche flan on top.
Place one scoop of vanilla or ube ice cream on top.
Sprinkle crisped rice on top of everything.
Mix the concoction to your liking and enjoy!
Remember that you can add or subtract ingredients. I personally dont care for the sweet beans so I omit those and add more coconut gel and macapuno instead. Others enjoy strips of fresh mango or pineapple included in theirs. Feel free to add your favorite ingredients. Be creative!
